Wild Garlic Pesto

There’s tons of wild garlic growing around here at the moment and it is so tasty! As I’m now a country gal, I had a little forage and picked some on my way home from the lake with my daughter the other day. She loved the smell, which is just as well, because my car was completely filled with it! Probably best to take a container with you if you don’t fancy the full experience haha.

Anyway, when we got home I made some wild garlic pesto, and I thought I would share the recipe with you as it is super easy and really delish.

I use: 2 big handfuls of wild garlic leaves, 1 garlic clove, grated rind of 1 lemon, An inch or two cube of grated parmesan cheese, 1 big glug of extra virgin olive oil and 1 handful of either pumpkin seeds or pine nuts and some salt and pepper. Throughly wash the leaves, leave in the flowers if you picked any as they’re fine to include. Mix it all together, blend it up and there you go! Stir it into pasta, drizzle it on pizza, make some coat a leg of lamb in it or use it to stuff a chicken.

Also, in case you’re interested, I made the serving dishes for fun and the texture was made by pressing individual grains of rice into the surface of the clay. I’ll definitely be sharing more of my serving dishes in the future!
